Dinner : Italian stuffed red peppers w/Rigatoni and oil cured olives

2- Large Sweet red peppers, whole, cap cut out (Small) and seeded

1/2 medium sweet onion chopped

8 Oz. chopped Portobello mushrooms

2- Tbls. chopped garlic

Mixed Italian seasoning

12- Oil cured olives, seeded and chopped

1/2 cup panko bread crumbs

3- Good quality Italian sausage

1 jar Alfredo or white sauce (I used ragu roasted garlic)

1/4 cup heavy whipping cream x 2

1 TBLS butter

4 to 6 Oz fresh shredded parmigiana cheese

2 1/2 cups rigatoni

Glass bread loaf pan

3 TBLS first cold pressed olive oil

Garlic powder

Crushed red pepper

Start by microwaving the peppers, standing in the loaf pan, until softened yet still able to stand. Nuke for 5 minutes and check and then another 3. Mine is 1000 watts and that is my number

Open the sausages and crumble for frying. Add to large pan with onions, garlic and mushrooms. Sprinkle with Italian seasoning and fry until browned and onions caramelized. When done add bread crumbs and stir. Add 1/4 cup of cream and enough Alfredo to moisten, about 1/3 cup. After most moisture is absorbed remove from heat and heat remaining Alfredo in a pan.

Cook the rigatoni twelve minutes and remove from heat. Drain and then add oil cured olives, garlic powder and olive oil. Stir in 1/2 parmigiana cheese

While standing stuff the peppers, 1st with parm, a couple of TBLS. , then stuffing mix. Repeat until pepper is full and make the last layer parm.

Keep all ingredients hot

Stand the peppers up in opposite corners of the loaf pan and fill around them with the Rigatoni mix until pan is close to full.

Add remaining cream and butter to Alfredo sauce and pour over Rigatoni ,leaving peppers exposed, until pan is full

Bake in preheated 350 oven for 20 to 25 minutes until white sauce and cheese is browned

Let stand for 5 minutes and serve with crushed red pepper. Careful on the salt as the oil cured olives are salt cured
